For breakfast this morning, I made "Puffy Pancakes" aka German Pancakes, Oven Pancakes, and more...
This recipe always takes me back to my childhood. From the time I was in my late elementary school years, my mother was, and still is, a Breakfast- Maker. It was a huge blessing to our family to have a hot breakfast every morning before we left for school. It was a blessing that none of us realized was a sacrifice for our mother, yet every morning, a hot breakfast was on the table...and it was healthy and home made...no Pop Tarts or Sugary Cereal at our house.
Puffy Pancakes
1 C White Flour
1 C Milk
6 Eggs
1/4 tsp Salt
1/4 C melted Butter
Mix flour, milk, eggs, and salt well. Pour into a greased 9x13pan. Drizzle melted butter over the top of the batter (do not mix). Bake at 400 degrees for 25 minutes. Sprinkle with powdered sugar, maple syrup, cinnamon, brown sugar, etc. There is a variation of this recipe with apples and applesauce, but this is the basic Pufffy Pancake recipe.
I was reminded of this recipe because of one of my new-found loves... Pinterest. Since I have discovered Pinterest, I have been reminded of great recipes and, in general, I want to have a party, dress better, take better care of myself and family, and get some household projects going. Caution...it is an addictive place to visit. I don't play on-line games or spend much time any where else on-line, but this place has been perfect as I am waiting at bus stops, etc. There is usually not enough time to get too involved in reading a book, but just enough time to "pin" a few of my favorite things from my phone.
Now back to the main subject..Thank you to my mom for making breakfast every day! I know it was a sacrifice but one that has not gone unnoticed or unappreciated.

Wow, Shauna! I looked at the "Pinterest" site and I'm very impressed. I shared it with my co-workers and it was a hit with them. Now it's going around the office :)
