Jenni's Salmon

My sister is an incredible cook and baker. If she gives me a recipe, I know it will be delish-- hands down-- no question!!! This recipe is from her and true to form-- awesome!

You will love this if you:
1) Like salmon
2) Like easy meals that taste like you worked all day
3) Like meals you can make ahead of time and walk in the door and cook

SALMON
Mix and set aside:
(You can cut these amounts in half- I happen to like capers a lot, so I use this amount)
4 T unsalted butter, melted
4 T Capers
4 T. Chopped Flat Leaf Parsley (Italian parsley)
1-2 small cloves garlic, minced

4 large Piece of Parchment Paper ( 20" approx.) Fold each in half
On each paper, place on the inside up at the top of the fold the following ingredients all divided among the 4 pieces Pieces of Parchment paper:

2-21/2 Lbs Salmon (divide into 4 equal portions)
1 large golden potato or 3-4 small new potatoes--sliced very thin (1/8")
1 shallot thinly sliced
2 C Baby Spinach
2 C Swiss Chard (opt.- you can just use Spiniach or just use Chard)
1 Lemon Thinly sliced

Place salmon on parchment paper, then layer above ingredients on top of salmon. Add caper butter mixture and top with lemons.

Seal edges of parchment by folding over and over all the way around. Place on baking sheet atn cook at 400 for 18-20 minutes.

This is great- you can do this all ahead of time and put in the refrigerator. When you come home, voila-- you have an awesome dinner waiting!

Make sure the potatoes and shallot are thinly sliced as they need to bake and get tender in a short amount of time.

As my sister says, this a glorified foil bake- you are just using parchment paper.
