Family Classic
At the beginning of our marriage 27 years ago,Ron's mother gave me "care instructions" for him. One of the top items on the list was the recipe for "Povlerons". They are called by other names such as: Mexican Wedding Cookies, Pecan Balls, etc. She explained that these were a family Christmas tradition he had always had.
Quickly, I learned that this is all it takes to help Ron feel like he has had his favorite Christmas Treat. I make Povlerons and Brownie Balls (see post below) and deliver them to Ron's office at the beginning of December.
I like to bake early in December before everyone tires of goodies and is on sugar overload. Early in the month, they are such a treat and more enjoyable.
1 C. Butter, softened (do not substitute)
1/2 C Confectioners Sugar
1 tsp Vanilla
2 1/4 C. Flour
1/4 tsp salt
3/4 finely chopped Pecans
Mix butter, sugar, and vanilla until light and fluffy. Blend in flour and salt, then add nuts. Chill dough 6-8 hours. Remove from refrigerator and roll into 1"balls. Place on un-greased cookie sheet. Bake 10-12 minutes at 400* until just beginning to turn golden. While hot, roll in confectioners sugar. Once all are rolled, roll again.
