Fix It And Forget It

The Ultimate Fix It and Forget It Meal
Chalupa Filling!!!
My Sister, Jenni, posted this incredible recipe for Chalupa Filling.
It is one of my family's favorites, which is great for me as it is one of the easiest meals to prepare.
With such an easy meal at my finger tips, it is my duty to share!

Here are my variations:
  • I always use chicken breasts. In fact, I start with 4 frozen chicken breasts...no defrosting or planning ahead--see why I like this recipe!
  • I use 2 cans of the Green Chilies
  • I double the amount of Cumin and Chili Powder- the chicken needs to have more seasoning than if you were to use pork.

I place the 4 frozen chicken breasts in the bottom of the Crock Pot, then I pile all the remaining ingredients on top, place the lid on it and forget about it while it cooks on high for a few hours. Once the Chicken has started to cook, I remove the lid and stir everything and cut up the chicken. A few hours later, I cut the chicken some more and stir some more. I cooked this on high for about 6-7 hours yesterday.

I serve soft flour tortillas and fried corn tortillas along with our favorite toppings of cheese, tomato, lettuce, sour cream, salsa, etc.
