Sickness Chicken
Yes, I know, that sounds yummy. This is my famous Broccoli Casserole Recipe with a name that is, up until now, only famous to my family.
My boys named this casserole "Sickness Chicken" as they observed me making it for others when someone has a baby, is ill, or in need of a meal for whatever reason. This is my standby, I have it memorized and generally have all the ingredients on hand.
In addition to Sickness Chicken being my Delivery Meal of Choice, it is also another Sunday Dinner Favorite. At least once per month, this will show up on the Sunday Dinner table. It is highly probable you have enjoyed this meal at my table if you have been a dinner guest at my house. I miss the days when my grown boys were at home and would snarf this down. With just Ron, me, and two little girls, it lasts for a few meals. I end up freezing half of it or finding someone to share it with. I don't share the alternate name for this recipe (that changed today) until someone eats it and is hooked!
Broccoli Casserole (AKA Sickness Chicken)
In a 9 x 13 Glass Baking Dish,
Layer the following in this order:
3-4 C Cooked Chicken
1 10 oz Package Frozen Broccoli (thawed and drained well)
2-3 C Cooked Rice
Mix Together at spread on top:
2 Cans Cream of Chicken Soup,
1 C Mayonnaise,
Juice of 1 Lemon,
1 Tbsp Curry Powder (more or less)
Next Layer:
2 C Shredded Cheddar Cheese on top of spread Soup Mixture
Top layer:
1 Box Cheese and Garlic Croutons
Bake uncovered for 20-30 minutes. Watch that the croutons do not burn.
